They aim to source the best available ingredients and developing simple Japanese dishes incorporating local produce. Think globally, but act locally where possible is an ambitious mantra when serving a product originating from the other side of the globe. However some Japanese ingredients are now successfully produced under license in Europe like Kikkoman Soy and Mitzukan Sushi Vinegar, both used by Feng Sushi. The products they import from the Far East are guaranteed to arrive to them by boat to minimize the impact on the environment. Since 2000 they have recycled their vegetable oil which in turn has been converted into bio-diesel. Also only used cardboard fold pack and paper bags for all their food and they have upgraded to a better product which contains some recycled material and new material from sustainable forest in Sweden. Their chopsticks, raffia and small soy pots are all bio-degradable and from sustainable sources. Finally they are currently working with Greener London to improve our recycling program throughout all our branches.
